I've just came from a kind of rough 'n' tumble conversation where people were arguing over the semantics of what happens when you do x = "arf"; y = x;, specifically for y. I've been told it was a copy, but some people insisted it was a reference to the original string. I know strings are immutable, but I don't know what that means in terms of assigning one variable a string from another string variable....

JS (and a lot of modern languages) have immutable strings and hold references to them.
That's why string concatenation is discouraged these days.
