@Waxi node/mongo looks very appealing, since mongo uses JS, but mongo is 'special' and unless you know why you should stick to a traditional DB with traditional guarantees on your data integrity. Also, postgres can do JSON if that's what you want.

Those are two separate concerns. If you were considering installing mongo on desktops, you were going down thw wrong path.

well, look at it this way. If you build it with electron, instead of dealing with the cross-browser issues you're used to, you have to deal with cross-os issues (assuming you wanted to release it to multiple operating systems.) Then you have to deal with getting people to install updates, etc, it just doesn't seem worth it to me unless you're using some edge technology that isn't covered in all browsers, such as midi.

once you're a bit more established, you can ask for half of the estimate up front and keep hours for the remainder

if you go over because of you, you don't add the time, if it's because of scope creep or lack of information on their part for complications, you work it out depending on the situation
