Is the underscore.js framework the "goto-framework" when it comes to modifying handling collections? Are there any "better"?
 
lodash is better but heavier. you can do most of it without any library at all, though
[].map(), reduce, etc.
better, in this case, means more helper functions, better chaining, and some other improvements.
if it's server-side and you don't care about weight, I'd go lodash. It does everythign you need + more. Another approach is to just use all 'official' array functions and polyfil those that aren't available, yet, in node (like [].find())
There might be other alternatives, but I really only hear about underscore/lodash, so I guess that qualifies it as the 'go to'.

it's not needed, no, but if you happen to use a varierty of it's functions and chain them, it can make for some elegant code.
if you just use map and reduce, then yea, it's pointless.

@Luggage chaining those is fun too... Some tricks like filter(Boolean) and the likes are fun too
 
like, take a list of events, and place that into rows and columns with columns for days, and then compact that to remove empty cells..
