Basically anything that interprets (executes) text is vulnerable and you can never make that stop. All you can do is sandbox the environment within which execution is occurring
I am still at the problem of parsing PDF-files (and will do this the next weeks) :) - A main problem is, how to parsing tables. I think about not just using C# to solve this problem
you may generate a more accurate result if you can just extract the context of the table from the PDF and look for it in other sources. For e.g., the table shows the list of MDMA, in that case, you can outsource the info from wikipedia, etc...
