Hey anyone got advice on good methods of saving variable data?

Im trying to save these variables to an offline file, but im unsure how I should go about doing it, All I could find online was "serialization" but Ive been told its unstable.

So, I decided to place all my variables into class "Item" But it makes it unrecognizable, It basically says the variables no longer exist

The application using EDMX is updating a weak entity
but it reports error of updating strong enity

Could this be a problem with addition of new tables? Something got messed up with the EDMX internally?
So to be more clear, I need to update few nullable fields in a weak entity(table), but somehow it tires to update a strong entity which of course is not allowed.
