I personally like systems that have all of the latest and greatest new features, and that breaks at the drop of a hat.
 
ubuntu server or centos server are both fine
 
@Kyll Kubuntu is pretty good (as is Ubuntu if you're fine with Unity)
I would generally avoid Gentoo/Arch as a Linux newbie

@Kyll Debian is a good solid base system with very little bloat. Kubuntu uses KDE which I don't like, but meh. I probably would never use Ubuntu Server.
 
For a dual-boot on an SSD, but yes development and day-to-day
 
If you like KDE, go for Kubuntu. If you like Gnome, go for Ubuntu.

I would say start off with Debian, because it is very stable and has very little bloat while having access to all of the standard server packages.
 
haven't tried to do anything productive with ubuntu server, but my laptop at home is ubuntu unity

Though really, I'd try a dry run for a day (maybe half?) on a live disk just to see if you like the environment

@Kyll mir is Canonical's stupid response to wayland. In the beginning Canonical completely backed wayland, then they decided to drop that and do something retarded instead.

Basically the idea behind wayland was to make the display server do as little as possible, and let the applications talk to the kernel as much as possible. The idea with mir is to do the exact opposite, which makes it pretty well a remake of X, which everyone hates and is the reason that wayland is being developed.
 
I can't say I've looked into Wayland or Mir that much aside from listening to the gnome mailing lists

Unity is Canonical's stupid response to Gnome 3. Gnome has been around forever, and has a very large developer base and a very mature code base. Gnome came out with Gnome 3, then Canonical said "No, we don't want to help develop something amazing, we want to develop something completely redundant."

Basically, Ubuntu is very similar to the user who specifically answers a duplicate question while knowing that it is a duplicate.
