a good sausage is mostly the cuts of meat that are not good for things like bacon or loin chops. A bit of fat to bulk out and add taste. A good bit of grain for the bulk of it.
I've been told it's sweeter than different kinds of meat, but I'm not sure if that's not a myth too.
of course, those dozen for £2 sausages are all sorts of evil muck
