I learned that I have a bunch of Japanese fonts that have only regular glyphs, and only a few that have italic ones. I don't know how to configure that, but apparently the one with most priority is a crappy one with only regular glyphs and no hinting. For italics that one doesn't have the glyphs, so it uses one of those with italics. The ones with italic glyphs all seem to have nice hinting.
