@Olaf It's not that hard to make good Semmelknödels. You can mess up Kartoffelknödels quite easily (at least the bohemian variant), we called these the Bohemian cannon balls when being kids.

@AndrewLi Deer is lekker, and lean yes. If it's cooked well, it's enough to use your fork to chop up the chunks.
@AndrewLi Deer is even that lean (and dry), that you should consider to add some extra bacon and fat to keep all the aromatics and have a juicy roast.
