I've found the processes that Win 10 uses to start updates, I've wondered about the feasibility of putting together something that kills them as they come up. When they get really annoying I can open the Process Manager and keyboard my way through the processes to kill it manually.
If you can't turn it off in the UI, you can probably do so in the registry or somewhere else.
The update process is quite controllable in a corporate setting. They may not make the options to easy for everyman, but they are there.

Through legitimate means, you can only turn off updates through the UI with Windows 10 Professional through Group Policy. (I think LTSB as well). For Home Users, you can only keep hitting 'Snooze' over and over again
