I was looking up software used in airplanes and got into the GUI that the pilots used and found some that were like widgets using XML. I need to investigate further though.

and I've worked in job that "require a degree"
Honestly, I went to one of the oldest software engineering degree programs in the US, and that only accounted for maybe a year or two of usable experience.
If I had a dollar for every job candidate I've rejected because they had a degree but couldn't handle simple problems that aren't covered in school, I could buy a couple coffees or a super cheap hooker.

almost all of the junior-year SDL projects and senior-year Senior Design projects are actual business contracts between the school and outside companies, at my alma mater.

I had to jury rig some shit to get the water cooler to fit on the front of the machine, but it's nice with a small overclock. The amount of settings on my mobo is nuts. It has an "auto overclock" mode, it's pretty cool

My experience with small to medium sized businesses is that they could always use some custom software, typically one-off type things. I don't know if the SaaS model would work in this case, or even if a company specializing in custom software could ever be profitable due to development time and whatever pricing you might have.
