Well, I don't know how different the CursorAdapter is from the usual adapter, but wouldn't your subclass of the RecyclerView.ViewHolder just hold a reference to a CursorAdapter and delegate the calls appropiately?

I'm not sure what you mean by "the usual adapter". To use ListView you must use one of the subclasses of its Adapter. Often this is either ArrayAdapter or CursorAdapter.
With RecyclerView, there are no ready-made subclasses of Adapter.

The reason is to keep my code clean and seperated, but also to be prepared for the future
I never used MVVM so can't really say something about it, but MVP is nice and widely used in Android
