I'd go for node or python in that case
Most apps don't need much else
Node, python, sqlite, postgres will cover you far and wide
 
What could Python help me in?
 
Python and node both have great out of the box support for most scaffolding you need
Ruby on Rails too
They also tend to have out of the box/library support for various services you might use like firebase, twilio etc.

Node is in general a bad approach to building good things
That said, it performs well enough and has enough demand if your goal is to just keep your head down and make enough money to live
I don't like node, but that doesn't mean I'll tell you it's a bad option as a developer. As a person, sure
 
I just want to learn things that I can use to build login/singup/chat general rest apis for now
 
Node will be fine for that
 
I dont want to use Firebase because it abstracts out so many things that I want to learn

Depends on what you want to do then
There's no one choice
 
I like mobile app development not because it's mobile, but because through this I can solve 'real world' problems and deliver it to people
So the only thing I am driven by is, "Solve real world problems"
 
You can do that at a much larger scale elsewhere, but ok
There's only so many problems an app can solve
Mostly you end up with micro optimizations
 
Exactly, I was just want to groom myself in a way that it should not be hard for me to transition to other kinds of development if I leave App dev for good
 
Then you should look at python, go, rust, probably in that order
But really, start with python or node for now, and come back in six months
