You can scale quite well using VMs if you've planned ahead.
That's what we're doing.
Especially since it's so easy if I don't set it up myself, if I have something small I go with shared hosting, if I have something bigger I can deploy it to the cloud.

Creating a VM is a click (or command) away, cloning one is also very easy, if you want to scale and feel like a smartass, you can even scale with a friggin slider
I love setting up my own stuff, it's fun, it's part of why I like linux in general. It forces me to understand what's actually happening, no automagick.
However, for production I'd rather not have to worry about that, it's one less thing to worry about which is big in my book
