Regarding thread safety and the GMP library, I'm having trouble understanding the requirements gmplib.org/manual/Reentrancy.html
Specifically "It’s safe for two threads to read from the same GMP variable simultaneously, but it’s not safe for one to read while another might be writing, nor for two threads to write simultaneously"
Okay, well there is no question mark in your statement, which makes it a difficult question to answer.
does that mean a mutex must be used when modifying a GMP variable or a mutex used for both reading AND modifying?

Yes, if reads and write occur simultaneously that is bad. So the authors ask that you serialize access to variables. Note that this is the standard requirement for most structures.
But must the reads be serialized as well as the writes? I.e. must an exclusive lock be obtained when a function to read is called, or just when writing?
You need to understand the underlying issue. The underlying issue that if a write happens during a read, the write has a chance of being partially completed resulting in wacky data during the read.
Ok. So the answer is both need to obtain a lock.
Or rather the read and write need an std::unique_lock/std::lock_guard on a mutex that serializes acess

You can ignore that, everything will work the way god intended if you don't pass bullishit build options.

Back in the day there used to be ways to allocate dynamic memory that would get messed up by system interups. Nobody should use the methods and they are disabled by default. If you are really bored you can ask a question about them, but as they are not the default options I would just keep coding and move on.

The underlying issue with fwrite (that it can, but does it really? uses some global scratch space) is solved if you serialize access to fwrite.
The issue with fwrite are somewhat complicated as, some implementations don't take a lock at all (NIOS II, which doens't have locks...), other require the user to take their own lock (GCC?), some other include a lock anyways (VS), and this gets screwed up when you have multiple process rather than threads. I suspect, as you have only one process and many threads you will be fine if you just wrap IO with an std::lock_guard/std::unique_lock construct.
On modern systems taking a lock is rather quick so it shouldn't be much of an issue.

In general with multiple threads, if such conditions aren't satisfied, what will happen? Does it result in UB where anything can happen?
Or would only specific data get corrupted?
It may result in crazy data corruption for larger structures. The underlying mental model is that only part of structure has finished changing when the data is read.
