You are born and given a first name and a surname (family name), you might have a middle name, and any of these can be double barreled, depending on how common you are. When you go to baptism, you take on a new name, confirmation is another new name, the ladies take on a new surname of course when married. Any number of these names can be traditional Irish names, an English name or any other modern bullshit (like Stainless, probably someones name I'm sure).
And yes, Irish is the language traditionally spoken, not Gaelic, that is a family of languages. That's like saying in everyone in Europe speaks 'Latin'.
As it stands, Irish has very few uses, hard (read: impossible) to say names, entertaining the Americans and a smug sense of superiority that they have this heritage to rub in the face of English people seem to e the more common uses.
