Well to be fair making a blog would run you through simple crud actions and authentication

It's not a bad way to get started

But for commercial use (legit blog) I would go with a ready made solution, let them handle maintaining it

A chat application without javascript would be... of limited abilities. Unless you are willing to use something like Opal.rb, that is.

You might be able to hack a simple server push by using an infinite frame, but I'm sure there's a reason nobody does that...

I mean, JS can be messy and bloated, but I feel it is necessary in certain cases. I am not a fan of HTML Canvas, or whatever, and would rather create new elements or actions with JS

You need Javascript to operate a canvas anyways. But yes, I'm a fan of DHTML.
