One problem I notice.. is header and footer height fixed? It needs to adjust to the content's height in some of the responsive layouts (e.g. the company logo be fluid with a min-widh)
header does not adjust to content.. footer the same but the result is even weirder
honestly I don't think you can solve this problem with CSS and divs
and from reading a lot this morning there is no proof that tables truly impact SEO (especially if you use a single table)
the only real "drawback" is that tables only render once the full content is downloaded.... but then again HTML is such a minor part of the content nowadays - not so much of an issue

my content is at 1200px right now, I think I've set the breakdown to 800px or something for the content's section... I set it wherever it made sense visualy

Think about it that you're using table for full layout, Right? and I said that tables should be used to present tabular data then SEO will think your whole website as tabular data, and every html5 tags that you will use also be showing inside table that's Why I suggested you to don't use tables for layout. That point your hole site look like tabular data and it's does not matter that you use 1 or 2 tables....
