Grid-based everything is the first approach.

Basically, we have an evenly-sized grid and all the parts of a level are just block types that fit on that grid

Collision detection can become extremely easy if your block types follow conventions (strictly 45 degree diagonal slopes, or strictly horizontal/vertical), and level saving / construction is quite literally a file with the number of blocks, width height, and an id for each block.
