Are you completely new to Elasticsearch
I need to come up with an example to show how to do it in Elasticsearch with set of requests
 
Kind of new
 
currently I am busy with my office work, if you wait i will come with proper solution but it would take some time
 
will the requests operate from my api?

if you will have a major Elasticsearch use-case, I can put in touch with you someone who can help with you for Elasticsearch queries, I don't have that much time but that person can spend more time so just wanted to know if you or your company have such requirements
meanwhile i will try to create a reproducible working API for your problem

but do you really have to create an api for this? i don't want you to work too hard.. you can also give me code examples or usful links
 
ok sure, let me give some pointers
1. you need to have another id field in your Elasticsearch document like `document_id` which is different from `_id` field and there you can have your own custom id like 1, 2, 3 and `document_version`
when you first time insert doc you can set them, next time when you update it you create entry in history_index with this data, and when you need to contruct entire hostory of a document, you just query the `document_id` not the _id and there will be multiple documents returned from hostory index
