You may not need a book
I'd recommend starting with the Microsoft documentations/tutorials: docs.microsoft.com/en-us/aspnet/core/mvc/…
And start using ASP.NET MVC Core 3.1
The old Framework MVC is becoming legacy tech now

I had aware of the project folder structure in VS. Webroot folder was the new folder in the asp.net core i had observed.

You can start on the tutorials/getting started items on Microsoft's site.
As you progress through their step-by-step instructions, you'll see them talk about any prerequisites you need to have
And the folder structure should become clearer as you work on a sample app, following the tutorials

Does anyone have experience with making a session manager static class? I began creating one however, I am not able to grab the HttpContext.session instance to use it. OR maybe I just need to handle sessions in a different way? any suggestions would be appreciated
I was also thinking of using some sort of middleware check that will run only on certain routes or folders.

I've used session/TempData but not to manage it
What is your requirement?
 
in this instance just for convenience methods
but maybe I am over engineering this
 
You shouldn't have to tap into the session object in most scenarios
I avoid it for storing things as it adds some overhead to the server
And then you have to clear the item out
You might be able to use a singleton class that's available for the app
A static class that has those utility methods on it
It'll be instantiated once for the whole app

i guess a bigger issue that I find more pressing is, what is the advised way of handling user authentication when they are not going to be a part of the hosted applications network?
usually I use Authorize attribute but if the users will be accessing the app from outside the local network, do I just use traditional username/password auth?

Actually, you'd always have your users provide un/pw
You can hit the AD first; if not found, then hit a table w/ un/pw
You can also do mixed auth with OWIN
So one app doing both AD/forms

I was looking at it as either AD or forms and not a mixed approach
sometimes just talking can open ideas when developing
