How much accuracy do I lose if I use image of various size to train a model?
 
Not sure this matters, what matters is the quality of the keypoints which are used to train

AI trains using keypoints. Nothing prohibits you to transform the image to another space or whatsoever, but keypoints of an image are still in some way what is being used for the model to recoognize what it is trained to recognize. Working with images of differen sizes provides it with keypoints of varying visual quality.

I was about to say, if you want meaningful results you'll have to normalize your input in some form or another
you can re up/downscale it after running it through the CNN layers or whatever you're using. But in-between you'll probably normalize it to some degree

Is there any short cut in normalising images?
Stretching, padding will likely to affect the accuracy. What about cropping? Assume the object of interest is usually in the middle ..
 
I guess that's one of the most asked questions in regards to machine learning at the moment :p
Maybe there is some business opportunity in that ~_~
