The brain synthesizes an image over time, so while his one eye obviously can't be in more than one place at a time, it can be in more than one place as the brain synthesizes an image. Note, I'm not saying this is accurate, only that having only a single functioning lens/sensor doesn't absolutely destroy all possibility of some degree of depth perception.
