so there's literally no way they can not pay me

You should have the contract spell out that rush jobs incur an additional 50% because of the time you need later to refactor stuff, and the every week has 1 day dedicated to refactoring

the 1 day is a good idea, I'd also add another day for bugs fixing

they were planning to get a tester at my request, it stayed on the "plan" status, same for the request of a second developer :D
