In my opinion a project is done when client have been using it for a week with no complains

My statement also applies to just your CI setup that the thing you built is running. Since its running remotely that stuff is such a hassle to debug.

Well from my perspective she's too much of a loose cannon, she's strung you along with the idea of being more than just friends while trying to date two separate guys since you've met her. She stops you from being more than friends because she doesn't want to hurt these guys.. If she wanted to be with you she would be with you. It reeks of her needing attention. From being with someone like that, I can only say that it's a lot more depressing to be with a toxic partner than it is to be alone

and I have a feeling that if things do work out between you and you start dating, there will be a part of you in the back of your mind wondering if she's doing with another guy what she was doing with you

lining up a backup to be with in the case that it doesn't work out

We have all the all-public fun couples have. Seeing someone is nice. I know she isn't available at the moment, so not too worried about it. I poke at her resolve from time to time for differents reasons, but not gonna push. If/when she decide the ldr is a bad idea that never works, I may still be around.
