Well, suppose I have some classes that draw a diagram on a Graphics in winforms, for example. Each instance of the concrete class is the same type, and takes an interface that draws something to the graphics context - Interface.DrawShape(g);
It doesn't make sense to pass the same implementing type of Interface to each one - they're different because they're different, obviously. But where does that knowledge live? Why should the DI root - that's nowhere near the diagram-drawing stuff - know about which implementer to pass when?
The answer I'm leaning toward is that DI frameworks are great for web applications, where it's more usual to want common but swappable behaviour everywhere

e.g. pass every page a common service that writes to a log, or changes the styles consistently, or whatever - which you can change just by manipulating the mapping code
whereas desktop applications tend to be written in a way that emphasises how their components are different, rather than the ways that they are the same. Therefore DI frameworks aren't necessarily a good fit for that style of coding.

@TomW I think IoC is good for testing as well. Say you have db stuff behind an interface. With IoC you can configure the IoC to resolve it to the mock when testing?

I try to where I can, but it depends on exactly what you mean by IoC
IMHO it doesn't make sense not to, it's just a good practice that's as fundamental as keeping code files small, writing meaningful variable names, avoiding globals and so on
My understanding is that it's just a way of structuring code, and there isn't really a good reason not to do it

Is it really the DI (IoC) that knows what implementer to pass when? Is it not more a matter of low coupling when You can just resolve an interface from anywhere?
 
@JohanLarsson Well yes, you can. You could just say new implementer(); anywhere you want and pass it back as Interface - but that isn't letting the DI framework do its job by newing the instance up for you
I suppose there's always factories
