A coworker of mine said that he doesn't think node is a good choice because it's not scalable. What do you think he means by that? (not that it will deter me from using it in personal projects)

I tried it once, not fun at all.
Ues Java, seriously. If not Java Python is your second best option, if neither then Haskell has surprisingly a lot of material on NLP (some good books and a solid package) @AbhishekHingnikar
But not JS, JS is horrible in terms of learning libraries and resources.

My computer works fine, though it has always had this problem where when the CPU kicks in for less than a couple seconds, any audio playing breaks up
I found out that my CPU IRQ shares the same IRQ as my audio, which I don't think is necessarily wrong, as some IRQ numbers are shared from what I understand
