honestly of all the interviews i have given interviewer was always had less knowledge than me except for one case where that guy was on another level of knowledge
 
I've seen lately a startup in India offering an interviewing service
company X needs a developer of Y expertise

Well, background services are still possible, they just need to be explicit, iOS doesn't allow you to do it at all
unless you're streaming audio
